幻の米 『穂増』収穫祭2021
『畑苗代×一本手植え×はざ掛け』と江戸時代の品種に合わせ当時の農法で育て収穫した『穂増』をさらに当時の醸造方法『生酛×木桶』を選択し、
『産土』思想に共感し援農にお越し頂いた皆様への感謝の気持ちを胸に、唯一無二の日本酒を産み出します。
『Homase』 harvesting festival 2021
Because the ancient rice 『Homase 』 is originally from the Edo era, we deliberately choose to apply the same farming methods used in that era, which are upland rice nursery,
hand planting, and “hazakake” an ancient drying technique, as well as traditional brewing methods called “Kimoto” and “Kioke”.
By creating sake rooted in tradition and having gratitude to all those who share and understanding our “Ubusuna” vision, we will produce a one and only incomparable sake.
